Cauliflower rice with Chilli

 I arrived home on Wednesday evening to find Adam in the kitchen. Looking all happy "Whoohoo, check out my rice cauliflower, i blitz it and look at it".

Indeed he had, blitz in the food processor and then lightly fried in some soy sauce. An alternative to rice, couscous or quinoa.

 

 We do love beans in or house. We buy big bags of dried beans (chick peas, kidney beans, black eye beans, mung beans etc)

You soak them in water overnight, they double in size so the key is to use a big pan and cover with a few inches of water.

After soaking the bean, you cook them on the hob for 40-50 minutes, depending on the type of bean, keep checking to see if they are going soft.

 Big pan of cooked beans. A mix of chick peas and kidney beans.

 It is super easy to use the beans to create a chilli dish. 

Method

-In a separate pan, fry an onion, a few cloves of garlic and a red chilli or in chilli powder.

- Add in peppers and mushrooms

- Add the beans and some canned tomatoes

- Season with salt/pepper/herbs of your choice (oregano is good)

Then serve onto the cauliflower rice
